Delicious ginger cookies!

Do you often feel guilty after eating a few cookies? Or do you often stand in the store looking in vain for a "healthy" cookie? Then we have good news for you because these delicious vegan ginger cookies are absolutely guilt-free!

They are super simple to make and provide your body with good nutrients like fiber, vitamins and minerals. Amazing right?! Because let's face it, who doesn't crave a cookie with coffee or tea in this weather?

In addition to an oatmeal and spelt flour base, these cookies also contain 12g of our very own PŌW Ginger Morning Shot!

Ingredients:

70g vegan butter
50g coconut flour sugar
100g spelt flour
65g oatmeal
1 tsp baking powder
grater of 2 to 3 tangerines
12g PŌW Ginger Morning Shot (= +/- 5 scoops)
Optional: dark chocolate for finishing


This is how to prepare the cookies:


Preheat the oven to 175°C.
Beat the butter and sugar until creamy. You can add the rest of the ingredients at the same time. Knead into a firm dough.
Divide the dough into 9 to 10 parts. Turn each piece of dough into a ball and place on a baking sheet lined with baking paper. Press the balls of dough flat with a fork. Make sure they are not too thick.
Bake the cookies for 15 to 20 minutes at 175°C.
Remove the cookies from the oven and let them cool for a while.
Little tip for the sweet mouths among us: melt some dark chocolate and finish the cookies with a thin layer of chocolate on each cookie.
